Cabbage rolls

Cabbage rolls (recipe taken from recettes du quebec)

Ingredients:

1 cabbage

Sauce:

3 cups tomato juice
3 tsp lemon juice
1/4 cup brown sugar
1 tsp salt
1/4 tsp pepper
1 clove garlic, chopped

Filling:

1 lb lean ground beef
1/2 cup chopped onion
1/4 cup uncooked rice
1/2 tsp salt
1 egg, beaten
1/4 cup water

1. Blanche the cabbage in boiling water

2. Remove leaves one at a time

3. Mix together all the ingredients of the filling

4. Form the filling into rolls

5. Wrap each roll with a leaf and tie up with string if neccesary, place in a large roasting pan with a lid

6. Mix all the ingredients of the sauce and pour over the rolls

7. Bake with the lid on at 320 degrees for 1 1/2 to 2 hours

I cooked the leftover cabbage with some extra sauce and it turned out amazing in a sloppy joe, here's a bowl of just cabbage and sauce:

  1. I love stuffed cabbage and used to make it all the time before we had kids. My kids were convinced they'd love it too. They begged me to make it for them. I had my doubts that they'd be fans, but I was still game to give it a try. So I made it -- and they wouldn't touch it. Somehow they hadn't realized that stuffed cabbage would involve CABBAGE. Sigh.
