Just read this article about country hams in the states. Now I want some ham! It was interesting to read this article, it goes into detail about the aging process and the breeds of pigs used. There are actually a few breeders here in Quebec that raise Durocs and Berkshires, the Vignoble Cote des Limousins raises Berkshires. I should have asked for some of the local ham when I went to the Charcuterie de Tours at the Atwater Market last Friday. I'll have to ask them what breed of pig it's from.
